Flint, clay soils
Vineyards & Viticulture:
Located in eastern Touraine, the property benefits from a continental climate. Summers and winters are milder than in Sancerre. The favorable microclimate ensures both excellent maturity and good protection against spring frost.
Harvest & Vinification:
Slow pressing using pneumatic presses, cooling at 5°C for 48 hours, then settling of the juice with thermo-regulated fermentation between 13-15°C. No malo, produced in stainless steel tanks.
