After 50 years of dormancy, the production of Ohmine Shuzo resumed in 2020. Located nearby a couple of impressive natural formations, including Akiyoshi Plateau and Shuhodo (limstone cave), Ohmine is blessed with exceptional water source that is soft but high in calcium content, which allows slow fermentation at low temperatures and the sake finishes fermentation at a lower alcohol level. The 3 Grain is made with 100% Yamada Nishiki rice (also known as the King of Sake Rice) polished to 50%, the result is a beautifully clean sake that gives substantial body and acidity, supplemented by notes of muscat grapes and pineapple.
