When I tasted with Kivelstadt Assistant Winemaker and "man in the vineyards" Sam, he got a little geeky about canopy management. The canopy refers to the leaves of the vine and how they shade the grape bunches. He told me that most California growers use the Burgundian method, which is to prune back any leaves for maximum sun exposure and ripeness. The seemingly obvious point that he made is that Burgundy is a cool climate growing region and California is not! Sam actually encourages growth of leaves to shade the grapes to maximize acidity and make the ripening process long and gentle. This focused and lifted blend of Carignane, Grenache, Syrah and Mourvedre shows the wisdom of that philosophy as it displays pure black fruits, meaty spice and ingrained acidity that keeps the ship comfortably afloat.
