Description:
This is an extremely fresh and lifted "vin bistro" alternative to your typical Cotes du Rhone. Exuberant aromatics of soft purple flowers, fresh cut strawberries, yellow plums, and bramble. Light medium body with crisp tart red fruit and just the right amount of grip and spice through the mineral and savory finish. Chat Fou mean crazy cat and is named after one of Eric's cats.
Vines planted in high altitude, warm, granite rich soils in the Ardeche region at the southern edge of the Northern Rhone Valley. Hand harvested with some whole clusters, all the grapes are co-fermented with native yeasts in concrete tanks and a 5 day maceration. Aged on the lees for a year with no fining or filtration.
The former nuclear engineer takes "natural wine" to the next level, going above and beyond organic farming, employing the plant-based elements of biodynamics, and ascribing to Fukuoka's "do-nothing" farming techniques: an extremely risky and atypical viticultural approach.
