A Guide to Cabernet Sauvignon for Wine Enthusiasts

Tue, Dec 05, 23

Cabernet Sauvignon has earned the admiration of wine connoisseurs worldwide. In this blog from our fine wine store, Rollers Wine & Spirits, we'll uncover the complexities surrounding this renowned red wine by going into its distinctive traits and discussing the best cuisines to pair it with.

Why is Cabernet Sauvignon Popular?

Cabernet Sauvignon is THE most planted grape in the world! Cabernet Sauvignon stands as one of the most globally renowned red grape varietals, with its origins rooted in the Bordeaux region of France. It typically gives rise to rich, intricate red wines, boasting a robust character full of complexity. Characterized by its thick skin, Cabernet Sauvignon is celebrated for its adaptability, but thrives in warmer climates and is regarded as a "Noble'' varietal. Surprisingly, this grape hails from its “parents” Cabernet Franc and Sauvignon Blanc. This grape varietal gained its notoriety because of its excellence, both on its own and when blended. More times than not, you will find this grape blended with other varietals that soften its mouthfeel and give it a smoother texture. On the other hand, it’s also added to lighter red varietals to add texture and complexity.

How to Serve Cabernet Sauvignon

For an optimal Cabernet Sauvignon experience, opt for large wine glasses to soften its tannins. Serve it at a temperature between 60–68°F (15-20°C) and allow it to breathe in a decanter for about an hour. When serving multiple wines throughout a meal, reserve the fuller-bodied ones for the later stages. This ensures they won't dominate the more delicate wines served earlier, creating a harmonious and refined tasting journey from lighter to fuller-bodied wines.

How to Store Cabernet Sauvignon

Before opening, store your unopened bottle in a consistent, cool environment between 50°F and 60°F, avoiding extreme temperature fluctuations. Maintain humidity at 50% to 80% for a proper seal and to prevent oxidation. A darker cellar enhances the wine's taste and quality and shields it from sunlight and artificial light. Store bottles horizontally to prevent cork drying.

Once opened, reseal it with a cork and keep it in a cool corner, not the fridge. Consume within 3-5 days to preserve its best qualities, storing it upright to minimize oxygen exposure. An unopened Cabernet Sauvignon can age gracefully for 10+ years in a cellar.

Top Producing Regions

Cabernet Sauvignon earned its bragging rights in Bordeaux, France. Its popularity led travelers to carry its clippings across borders, contributing to its cultivation in prestigious wine regions worldwide, such as Napa Valley, South Australia, and Chile. Napa Valley is known for creating highly concentrated Cabernet Sauvignons that exude opulence, with notes of juicy ripe fruit, minerality and plush tannins. Australian bottlings of the grape boast bold, stewed fruit notes, big tannins and hint of eucalyptus. In Bordeuax, Cabernet Sauvignon is often blended with one or more different grapes such as Merlot, Malbec, Cabernet Franc, and Petite Verdot. These bottlings are some of the most coveted and age worthy wines in the world!

Tips to Keep in Mind When Pairing Cabernet Sauvignon

Pairing Cabernet Sauvignon with the right foods elevates your dining experience. Here are some guidelines to follow:

This versatile wine also pairs well with fruity and umami cheeses, beans, legumes, baking spices, and black pepper. Avoid pairing it with salty, crumbly cheeses, sour cream, exotic spices, red pepper, and certain vegetables like cauliflower and broccoli. Stay clear of spicy foods, as the wine will make the food even spicier.
